  • 10 oz zucchini, sliced
  • 10 oz yellow squash, sliced
  • 2 Tbsp olive oil
  • 2 Tbsp butter
  • Salt and pepper to taste
  • 3 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/3 cup finely shredded parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh parsley for garnish

  1. Heat 1 Tbsp olive oil in a non-stick skillet over medium-high heat.

  3. In the same skillet, add remaining olive oil and butter. Sauté zucchini and squash with salt and remaining spices for about 4 minutes until tender.
