  • 1 cup 2% Milk
  • 1/2 cup Part-Skim Mozzarella Cheese (shredded)
  • 1/2 cup Pepperoni (chopped)
  • 1/4 cup Cherry Tomatoes (chopped and seeded)
  • 1/4 cup Green Peppers (chopped)
  • 1 cup Pizza Sauce (for serving)

Instructions

  1. In a bowl, mix together the Biscuit/Baking Mix and Italian seasoning until combined.
  2. In another bowl, whisk the eggs and milk until fully blended.
  3. Combine the egg mixture with the dry ingredients, stirring until just moistened.
  4. Fold in mozzarella cheese, chopped pepperoni, cherry tomatoes, and green peppers.
  5. Preheat a non-stick griddle to medium heat and lightly grease it.
  6. Pour batter by 1/4 cupfuls onto the griddle; cook until bubbles form on top and bottoms are golden brown.
  7. Flip and cook until both sides are nicely browned.
  8. Serve warm with pizza sauce for dipping.
