  • 1/4 cup granulated sugar (for filling)
  • 1 Tbsp all-purpose flour (for filling)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp pure vanilla extract
  • 1 egg (beaten for egg wash)
  • Coarse sugar (for sprinkling)

Instructions

  1. Prepare the dough: In a food processor, mix flour, granulated sugar, and salt. Add cold butter and pulse until crumbly. Gradually add ice water until dough holds together. Form into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Slice peaches and mix with sugar, flour, cinnamon, and vanilla in a bowl; set aside.
  4. Roll out the chilled dough into a 12-inch circle on a floured surface and transfer to the baking sheet.
