  • 5 oz (150 g) baby spinach
  • ¼ cup (30 g) grated parmesan cheese

Instructions

  1. Boil water in a large pot. Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a skillet over medium-low heat. Sauté minced garlic until fragrant, about 60 seconds.
  3. Add cherry tomatoes, oregano, salt, and pepper; cook until tomatoes burst and release juices.
  4. Stir in spinach until just wilted.
  5. Combine cooked pasta with the tomato-spinach mixture and add parmesan cheese and reserved pasta water as needed for moisture.
  6. Serve hot with extra parmesan and freshly cracked pepper.
