  • 4 eggplants
  • 1 kg ground beef or lamb
  • 800 grams crushed canned tomatoes
  • 1 liter milk
  • 200 grams Kefalograviera cheese (or Parmesan)
  • Olive oil, spices, and seasonings

Instructions

  1. Preheat your oven to 165°C (fan-forced). Slice the potatoes, zucchini, and eggplants into rounds.
  2. Heat olive oil in a large frying pan over medium-high heat and fry the vegetables until golden brown. Drain on paper towels.
  3. In a large pot, sauté chopped onion and garlic in olive oil until soft. Add ground meat and cook until browned.
  4. Stir in red wine and let simmer before adding crushed tomatoes and spices. Simmer for about 10 minutes.
  5. For the bechamel sauce, melt butter in a saucepan, whisk in flour, then gradually add milk while stirring until thickened. Add egg yolks and cheese.
  6. In a baking dish, layer potatoes, eggplant, zucchini, meat sauce, and top with bechamel sauce.
  7. Bake for 40 minutes or until golden brown. Let rest for at least 30 minutes before serving.
