  • 1/3 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup canned pumpkin puree
  • 3/4 cup evaporated milk
  • 1 large egg
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out pie crusts to 1/8 inch thick; cut into 18 circles using a cookie cutter.
  3. Place crust circles into muffin pans and chill.
  4. In a mixing bowl, whisk brown sugar, granulated sugar, pumpkin pie spice, and salt. Add pumpkin puree, evaporated milk, egg, and vanilla; mix well.
  5. Fill each crust with about two tablespoons of the filling.
  6. Bake for 16–20 minutes until set and lightly golden.
  7. Cool on a wire rack for about 30 minutes before chilling in the fridge for at least three hours.
