  • 810 all-beef hot dogs (cut into 1-inch bites)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together melted butter and sugar until combined.
  3. Add eggs and mix well.
  4. Pour in the buttermilk and whisk until smooth.
  5. In another bowl, mix baking soda, cornmeal, flour, and salt; then gradually add to the wet ingredients.
  6. Grease a muffin tin with cooking spray. Spoon about 1 tablespoon of batter into each muffin cup and place a hot dog bite in the center.
  7. Bake for 8-12 minutes until golden brown.
  8. Allow muffins to cool in the tin for about 5 minutes before removing.
