How To Cook Artichokes

Instructions

  1. Wash the artichokes under cold water. Trim the bottom of the stem and remove tough leaves near the base.
  2. Using scissors, trim about 1/4-1/3 off the thorny tips of each leaf.
  3. Cut off the top of each artichoke with a sharp knife.
  4. In a large pot, pour in filtered water and add olive oil and lemon juice. Bring to a boil and then reduce to a simmer.
  5. Place artichokes in the pot, cover, and steam for 35-45 minutes until stems are tender and leaves pull out easily.
  6. Remove from pot, cool slightly, cut in half lengthwise, scoop out the choke, and serve with dips like vinaigrette or garlic aioli.
