  • 2 large heirloom tomatoes
  • 1 cup fresh arugula
  • 1/3 cup creamy feta sauce
  • 2 tbsp balsamic dressing
  • 1/4 cup panko breadcrumbs
  • 2 tsp extra virgin olive oil
  • pinch flaky sea salt
  • pinch freshly cracked black pepper
  • 1/2 tsp Italian seasoning

Instructions

  1. Slice the stem ends off the tomatoes and cut into 1/2-inch thick slices. Arrange on a platter and sprinkle with salt and pepper. Drizzle with olive oil and let marinate for at least 15 minutes.
  2. Prepare the whipped feta sauce according to your recipe.
  3. Make or have balsamic dressing ready.
  4. Toast panko breadcrumbs in olive oil over medium-low heat until golden brown.
  5. To assemble, spread whipped feta on a plate, layer marinated tomatoes on top, scatter arugula, drizzle with balsamic dressing, and finish with toasted breadcrumbs.
