  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp ground pepper
  • 1 tbsp fresh chopped parsley

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine halved potatoes and carrot coins.
  3. Drizzle with olive oil and add rosemary, thyme, salt, garlic powder, and pepper. Toss to coat.
  4. Spread the vegetables on the baking sheet in a single layer, cut side down.
  5. Roast for about 40 minutes, turning halfway through until golden brown.
  6. In a saucepan, melt butter over medium heat; add minced garlic and parsley until fragrant.
