Ingredients

Scale
  • 2 small boneless skinless chicken breasts
  • Salt/pepper (to taste)
  • 3 cups chicken broth
  • 4 tablespoons butter
  • ½ cup onions, finely diced
  • ½ cup celery, finely diced
  • ½ cup carrots, finely diced
  • 2 cloves garlic, minced
  • ⅓ cup flour
  • ½ cup half and half
  • 1 chicken bouillon cube
  • 1 teaspoon low sodium soy sauce
  • 1 cup frozen peas

Instructions

  1. Season chicken breasts with salt and pepper. Melt 2 tablespoons of butter in a cast iron skillet over medium heat. Cook chicken until browned on both sides (5-7 minutes each). Remove and set aside.
  2. In the same skillet, melt remaining butter. Add onions, celery, carrots, and garlic; sauté until softened (5-6 minutes). Stir in seasonings.
  3. Sprinkle flour over veggies; gradually add chicken broth while stirring to prevent lumps. Mix in half and half until smooth.
  4. Chop cooked chicken into bite-sized pieces and return to skillet with frozen peas. Simmer for an additional 5 minutes.
  5. Preheat oven according to biscuit instructions. Drop biscuit dough over filling mixture in the skillet and bake until golden brown.
