  • 1 teaspoon Cajun seasoning
  • 1 red bell pepper (diced)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 1 ½ cups chicken broth
  • ¾ cups heavy cream
  • Cheddar jack cheese (for garnish)
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar (I use light)
  • ½ teaspoon EACH: mustard powder, oregano
  • 1 pinch EACH: cayenne pepper, red pepper flakes
  • Lime Wedges
  • Fresh Cilantro (roughly chopped)

Instructions

  1. Prepare all ingredients by dicing the bell pepper and mincing the garlic.
  2. In a skillet over medium heat, warm olive oil, add shrimp seasoned with Cajun spices, and cook until pink (about 2-3 minutes). Remove from skillet.
  3. In the same skillet, melt butter and sauté garlic until fragrant. Add flour, whisk in chicken broth and heavy cream until smooth.
  4. Stir in honey, hot sauce, diced tomatoes, cheese, lime juice, and additional seasonings; mix until combined.
  5. Return shrimp to the skillet, coat in sauce, and simmer for another 5 minutes.
  6. Serve over rice or pasta with lime wedges and cilantro.
