  • 1 lb ground beef
  • ½ cup black beans
  • ½ cup corn

  • 2 garlic cloves
  • 1 cup tomato sauce
  • 1 cup shredded Monterey Jack cheese
  • 2 Tbsp olive oil (divided)
  • Salt and pepper, to taste
  • ½ tsp chili powder
  • ½ tsp ground cumin
  • ¼ tsp paprika

Instructions

  1. Preheat oven to 375°F.
  2. Halve zucchini lengthwise; scoop out insides and set aside.
  3. Bake zucchini halves in a greased baking pan for 8-10 minutes until softened.
  4. In a nonstick skillet, sauté diced onion in olive oil until translucent. Add minced garlic and cook for another minute.
  5. Brown ground beef in the skillet until fully cooked; drain excess fat if necessary.
  6. Stir in reserved zucchini flesh, black beans, corn, tomato sauce, and spices; simmer for 5-6 minutes.
  7. Stuff each zucchini half with the filling and top with cheese.
  8. Bake again for another 10 minutes until cheese is bubbly.
