  • 3/4 cup unsweetened applesauce
  • 1/2 cup (114ml) coconut oil (melted)
  • 1 large apple (shredded)
  • 1 tablespoon vanilla extract
  • 2 cups grated carrot (about 3 medium)
  • 1/2 cup raisins
  • 1/2 cup flaked coconut
  • 1/3 cup walnuts (chopped)

Instructions

  1. Preheat oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, ginger, and salt.
  3. Add applesauce, melted coconut oil, shredded apple, and vanilla extract; stir until just combined.
  4. Fold in grated carrots, raisins, flaked coconut, and walnuts until evenly distributed.
  5. Fill muffin cups evenly with batter. Bake for 10 minutes at 400°F; then reduce heat to 350°F (175°C) and bake for an additional 10-12 minutes until a toothpick comes out clean.
